Our space is divided into four functional areas: a catering kitchen, pastry kitchen, cool room, and packaging / storage area. A quick summary of our equipment is listed to the right. The only items we ask our clients to bring are small wares such as utensils and scales, and disposable items (plastic wrap, foil, sheetpan liners, etc). We can accomodate a wide range of needs, and support growing businesses. We’ve had everything from one baker to a team of 12+ cooks using our kitchen at one time. Whether its daily production runs or one time catering events for 200+ guests, we have the space. Reserving Kitchen Time Each kitchen is booked separately. There is a common warewashing area in the center of the facility, with smaller hand and/or prep sinks in each kitchen. We handle booking by accepting reservations for the current and next calendar month. Priority is given to standing reservations, allowing our clients to establish a regular schedule. New and additional reservations are handled on a first-come, first-served basis. Cleaning & Supplies Each customer is responsible for cleaning the kitchen as part of their kitchen use, including all equipment, tables, and floors. We’ll supply all the necessary cleaning supplies and will take care of the periodic deep cleans.

Splice Kitchen will be one of the first shared use kitchens in Chicago to open solely for foodservice professionals and small business owners to start, operate and/or grow their business. This shared-use kitchen in Chicago will give business owners the possible use of high grade commercial kitchens, office space, event space, and tons of resources without the commitment or overhead expenses associated with owning/operating commercial kitchen space. Splice Kitchen will be open 24/7, and will be available for rent by the hour (discounted memberships based on hourly usage will also be available).

Our kitchen features all new equipment, including 8 burner gas stoves, grill, griddle, convection oven, walk in cooler, ice machine, dishwasher. We have a small collection of pots, pans, and cooking utensils, users may need to bring some of their own. We use the kitchen as needed for banquets and events. Hours for shared use are 7AM-9 PM, 2 hour minimum. Chicago ordinance requires users to provide menus, sources of food, and shared kitchen user license or retail food license.

The six Washburne Culinary Institute Incubator Kitchens are equipped with a Montague eight-range cooktop with an oven, a convection oven and a deep fryer. The arrangement includes shared use of a gas grill, tilt skillets and stock pots, a Hobart mixer, steam kettles, a three-compatrment sink, a Hobart slicer, ice machines, a walk-in cooler and two stainless steel work tables. Rental fees include pest control and trash removal. Clients are expected to have business insurance and appropriate sanitation and shared kitchen licensing.
